Add diced fresh garlic
Dice 1/2 medium yellow onion place in bowl
dice either fresh tomato or open can of diced tomato's and place in bowl
One can of refried black beans
One jar or can of enchilda sauce with green peppers
shredded cheddar cheese
Pour half of the enchilda sauce in a baking pan, shake around until well distributed and sprinkle until bottom is covered
Take either medium or large size soft taco shells and begin to assemble
first spead a medium amount of black beans on the taco shell
next a little of the onion and diced tomato, and a little ground beef
Roll up the enchilda with contents and place in the pan joint side down
spread the rest of the enchilda sauce over the top of the enchilda's make sure it is well distributed.
Sprinkle shredded cheese over the top of the sauce
one can also spread a few more diced tomato's and diced green onion over the mix for color.
Put in an oven at "350" and bake for 20 to 25 minutes and serve.
