Choose-A-Fruit-Or-Vegetable-Bread

This is a generic recipe I found. You can use any fruit or vegetable that you think would make a good bread.

Choose-A-Fruit-Or-Vegetable-Bread

1/2 cup oleo or butter
1/2 cup sugar or Splenda
2 eggs
2 TBsps. milk or fruit juice
1 tsp. vanilla
1 tsp. lemon or orange peel
1 cup shredded or cut-up desired vegetable or fruit
1 1/2 cups flour
1/2 cup Quick Oats
1 tsp. baking soda
1 1/2 tsps. cinnamon
1/2 cups desired chopped nuts, optional
1/2 cup raisins, optional

Heat oven to 350 degrees.

In a large bowl, beat butter for 30 seconds. Add sugar
and beat until fluffy. Add eggs, milk or fruit juice,
vanilla and lemon or orange peel and beat well. Stir in
vegetable or fruit. Add flour, oats, baking soda and
cinnamon; beat until combined. Stir in nuts and raisins
if desired.

Pour into greased loaf pan. Bake for 55-60 minutes, or
until toothpick inserted in center comes out clean. Cover
with foil last 10 minutes of baking. Cool, then wrap and
store in refrigerator over night for easier cutting.

This sounds like a great way to use a variety of either fruit or veggies to keep the recipe from getting old.

Yes, you can use whatever you want for whatever flavor you want. I suppose you could even use cocoa or chocolate for chocolate bread.
