Zucchini Bread

I don't like any squash, including zucchini, but I do like this.
Someone brought some to work one time. After eating some,
I asked what it was. She said, "Zucchini bread". I asked, "What's
that?" (Meaning the zucchini) She said, "Squash." I said, "Well, I
like it anyway. Can I have the recipe?" So here it is.

Zucchini Bread

4 eggs
1 1/2 cups sugar or Splenda
1 cup vegetable oil or other oil
3/4 cup can be used
One 20 oz. can crushed pineapple, save juice
3 1/2 cups flour
1 1/2 TBsp. cinnamon
2 cups grated zucchini
1 tsp. baking soda
2 tsps. baking powder
1 tsp. lemon peel
1 tsp. orange peel
1 cup crushed walnuts or pecans
1 cup raisins

Heat oven to 350 degrees. In large bowl, beat eggs
until frothy. Add sugar, oil, vanilla and drained
pineapple and mix well. Stir in flour, baking soda,
baking powder and cinnamon. Add zucchini and beat
well. Stir in nuts and raisins.

Pour into two greased loaf pans. Bake for 1-1 1/4 hours,
or until toothpick inserted in center comes out clean.
Cool slightly before removing from pans. Cool completely
before slicing.

Hi Jon-Marc. I have loved zucchini bread ever since my Aunt Sharleen first introduced it to my family in 1974. Has always been a favorite for us. We generally only make it during the winter holidays and sometimes give as gifts. Also great, is zucchini chocolate cake. But like you, I never liked squashes of any kind and through experimentation or just times of not wanting to offend others when I was a guest for dinner, I learned to like certain squashes (summer and winter ones) and actually look forward to them now. I enjoy grilled yellow and green summer squash and baked and stuffed acorn winter squash (baked with bread stuffing and ground turkey). Of course squash in bread is totally different than squash sitting naked on a plate as far as taste and texture goes so I am not telling you any of this to encourage you to like squash. I still won't eat certain things. And no matter how you slice it, I will never like onions ( :argh: ) or liver or all the other things that I grew up being told would "Put hair on your chest." Must be why I don't have hair on mine. LOL On that note, my homemade turkey pot pie is ready now. MMMMM I don't have zucchini bread in the freezer for dessert so I will have to settle for carrot bread with cream cheese.

Just a side note. My aunt's recipe is much different than yours but I will try yours too, Jon-Marc. Thanx
