Grilled Vegetables

This is very simple to do. I cut up lots of peppers (green, red, yellow and orange) into small square shaped pieces....maybe 1/2 inch by 1/2 inch/ Also, I cut up onions, squash and zuccihini. That all goes into an large mixing bowl, and I add a drizzle (maybe a tablespoon or two) of olive oil, some oregano, basil and ground black pepper. Mix it all together, and then grill for about 10 - 15 minutes. This makes for a quick, healthy meal, and sometimes I serve it over rice.

I'll do the same, but stir-fry the vegies. (Stir-frying is essentially sautéing; you put them in a frying pan or wok on high heat and stir relatively constantly till done.) You can use just about any combination of vegetables and spices. I like using curry powder and a little garlic with carrots, cabbage and onions; this has the advantage of being very cheap. 8)
