The elk cuts we inherited when Numnber 1 Son's associate could not transport them to new quarters did not include ribs, but were tasty though lean and a bit fine grained.

It is not fat on the ribs but fat in the ribs that is the problem. There is multilayering and the fat is between layers. and/or marbled in the meat hence it cannot be trimmed off and must be reduced by the choice of cooking technique.
I never met anyone that I could not learn something from.
