Carob Balls

Carob Balls

...or Power Balls as I like to call them. This is a really healthy treat. There is no baking and no processed sugar. I made these up for some of the guys I drive around and they loved them...they kept asking if they could have more.

Use equal amounts of:

Carob Powder (unsweetened)
Coconut (unsweetened)
Walnuts (unsalted)
Sunflower Seeds (Unsalted)
Honey

Chop up the nuts in a chopper. Put all dry ingredients in the bowl first. Add the honey last. Mix together. Keeping hands moist to form into bite size balls by rolling between the palms of your hands. Refrigerate. :yum:

I have no idea what carob is. I use sugar free honey. It's not as good as the real thing but great for those with diabetes.

Carob is a natural chocolate "substitute." It doesn't really taste much like chocolate, but it has a similar color and texture. I ate a fair amount of it when I was getting tested for allergies; chocolate was one of the things they thought I might be allergic to. Fortunately, I'm not. :D

I've never seen one either, but if I did, I bet it would be either awfully protective or awfully MAD!
