Although I'm curious why the full song title is "Nun danket alle Gott" when the correct conjugation would be "danken". Is that archaic German?

Not that archaic. Using the 2nd plural - Ihr dank(e)t, ye thank. The formal Sie danken was less primary option then.

That is a nice version of the old Shaker song - the past week we were hearing a rather obnoxious version irritating.

I hear it more as a celebration of what one might call liturgical dance than thanksgiving per se - but of course that is in there as well - grace is a big component of liturgy.
